Heading the new venture will be talented chef Ryan Waters, who has worked in some of Wales top restaurants. Ryan joins forces with co-owner and partner Sophia in offering delicious, high-quality, and locally sourced food at a reasonable price.
The exciting new Sunday collaboration starts this Sunday (January 25th), marking the next chapter for Bluebell as a fully family-run business, with food, ideas, and service all developed in-house.
Together, they are introducing a chef-led Sunday roast concept designed to bring comforting, high-quality roasts into customers’ homes.

“Roast @ Bluebell is a chef-led Sunday roast service, created to sit alongside Bluebell’s much-loved Sunday brunch,” said Ryan ahead of the launch.
“Each roast is carefully cooked in advance, properly portioned, thoughtfully packaged, and collected from Bluebell on Sundays.
“All orders are pre-ordered and pre-paid, allowing the kitchen to plan properly and deliver a calm, premium experience.
“Customers choose their roast and any extras, select a Sunday collection time slot, and pay in advance. This ensures food is ready on arrival and keeps everything running smoothly.
“At launch, the roast will be collection only. A delivery option is planned for the near future once the service is fully established.”

Ryan says the difference with his menu is that it focuses on slow-cooked Sunday roasts prepared with time and care.
Core options include overnight Welsh beef brisket and 16-hour pork belly with crackling, alongside a dedicated vegetarian roast option.
All roasts are served with thyme-roasted carrots and parsnips, steamed savoy cabbage, and bone marrow gravy.
A vegetarian roast will also be available, created with the same level of care and attention as the meat options. Vegetarian gravy and clear allergen information will be provided with every order.
For those with a sweet tooth, mouth-watering desserts such as very sticky toffee pudding, Banana & walnut Loaf with a banana caramel sauce and chocolate brownie will be available, with custard offered as an optional extra, all packaged separately for easy reheating at home.

Bluebell will also be continuing its popular in-house Sunday brunch service which will continue as normal.
“The Sunday Roast service has been designed to run smoothly alongside the brunch,” continued Ryan.
“We feel the roast service will complement Bluebell’s existing offering rather than replacing it.
“ROAST @ Bluebell is about keeping things simple and doing them well — proper Sunday roasts, cooked with care, run as a family business, and enjoyed at home.”
Prices start from around £13. Premium options, sides, and desserts are also available as add-ons.
All orders are to be placed online via the Bluebell website. Reheating instructions will be provided.
